Buster Holmes was famous for his beans, especially red beans. He had a restaurant in the French Quarter on Burgundy St., and in 1980, he wrote a cookbook. Holmes was a French Quarter fixture. He was always smoking or at least holding his cigar, and he had a way with beans.
